Insect Cuisine w/ Chef Cass & Ent Tune

Fine dining meets entomology! This class will focus on the preparation of familiar cuisine using a popular (yet commonly misunderstood) protien source from all over the world – insects! This class will focus on creating dishes which feature insects as a main ingredient, prepared in a variety of ways, as well as an education in why eating insects is good for both you and the planet. Includes wine and a chance to chat with our expert chefs.
About the Instructors:
Cassandra lived in New York City from 2006-2013. This is where she discovered her passion for the many different cuisines from around the world. She graduated from the Iowa Culinary Institute at DMACC in 2015. She is personal Chef for many small businesses in the Des Moines area. Her favorite cuisine to cook at home is Traditional Sichuan Cuisine from North Western China.
JaV’on’s entomology career started when she was a kid and has continued to flourish since then. Her passion for entomophagy began in 2013 at Iowa State University where she was one of the last to cross the stage and receive her bachelors in entomology in 2016. She’s striving to make an impact by exposing you to edible insects and their immense benefit to not only you, but your environment.
